Taco Rice Bowls
HELLO First (Well second but the FIRST REAL) blog post! Why is it so incredibly intimidating to start something new? The fear of the unknown? What people think? I am very much a people pleaser and care what people think of me, my business, and the like. So here I am stepping out of my comfort zone and stepping out in complete faith.
As I sat down to try to decide what I wanted my website to be, I had a lot of ideas but I felt like my readers would enjoy more than sourdough and that’s why I am sharing our favorite Taco Tuesday Rice Bowls, with a homemade chipotle ranch. Need I say more?

Taco Rice Bowls
A taco rice bowl with homemade chipotle ranch is a vibrant, flavorful meal featuring a bed of fluffy rice topped with seasoned ground beef (or grilled chicken), black beans, fresh (or frozen) corn, diced tomatoes, and shredded lettuce. A homemade creamy chipotle ranch drizzled over the top adds a spicy, tangy kick, perfectly balancing the savory ingredients. Finish it with a sprinkle of shredded cheese and a squeeze of lime.
Ingredients
2 cups uncooked rice
2 cups water
1 lb ground beef (or chicken)
2 garlic gloves (minced)
2 Tbsp homemade taco seasoning (or 1 packet of taco seasoning)
3/4 cup water (for taco seasoning)
1 cup diced tomatoes
1 cup lettuce
1/2 cup onion (to top each bowl)
1 1/2 cups shredded cheese of your choice
Salsa (to top)
Squeeze of lime juice

Instructions
We love to cook our rice in our instapot on the rice setting. Add your rice and water and set your instapot to the rice setting and let it naturally released after it is done.

2. Next, Start by browning your ground beef over medium-high heat. Once your beef is almost browned, add it your minced garlic. Heat until fragrant. Next, add your taco seasoning and water. Reduce temp to low.

3. Prepare your toppings and set aside.
4. Once your rice is done, Assemble your bowls with your preferred toppings!
Notes
You can certainly sub ground beef for chicken
other optional toppings would be corn and black beans, but our family doesn’t like those. Feel free to tailor this recipe to your liking!
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat and Serve.
